Blueberry Crumb Cake Recipe

Ingredients

Crumb Topping

1 cup all-purpose flour
½ cup brown sugar
¼ cup granulated sugar
1 teaspoon cinnamon
½ cup unsalted butter, melted


Cake

1½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

½ cup unsalted butter, softened
¾ cup granulated sugar

2 large eggs

½ cup sour cream or Greek yogurt

1 teaspoon vanilla extract

1½ cups fresh blueberries


Instructions

1. Prepare the crumb topping

In a bowl, combine flour, brown sugar, granulated sugar, and cinnamon.
Stir in melted butter until large crumbs form. Set aside.


2. Preheat the oven

Preheat oven to 350°F and grease or line a loaf pan or small baking dish with parchment paper.


3. Mix the dry ingredients

In a bowl whisk together:

• flour
• baking powder
• baking soda
• salt


4. Cream the butter and sugar

In another bowl, beat butter and sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.

Stir in sour cream and vanilla.


5. Combine the batter

Gradually add the dry ingredients to the wet mixture and mix just until combined.

Gently fold in the blueberries.


6. Assemble the cake

Spread the batter into the prepared pan.

Generously sprinkle the crumb topping over the entire surface.


7. Bake

Bake for 40–50 minutes or until a toothpick inserted in the center comes out clean.

Allow the cake to cool before slicing.


Tips for the Best Blueberry Crumb Cake

• Toss blueberries lightly in flour before adding to the batter to keep them from sinking.
• Use fresh blueberries for the best flavor, but frozen can work as well.
