Why February Babies Love Citrus (and the Cake I Made for Them)

There’s something special about starting each month with a bake inspired by the people born in it.

It’s part of my monthly birthday baking series — on the first of each month, I make a dessert based on what that group of birthdays tends to love most.

And for February, one flavor came up again and again:

bright, tart, citrus.

February sits in that interesting space in the year. It’s still winter, still cozy, but you start craving something lighter. Something that feels like sunshine without losing the comfort of baking season.

That’s exactly where lemon comes in.

🍋 The Flavor February Babies Gravitate Toward

People born in February are often described as:

  • Creative
  • Thoughtful
  • Independent
  • A little unique

And their flavor preferences tend to match.

They don’t usually go for overly sweet desserts. They prefer something that feels fresh, lively, and a little unexpected — like citrus.

Lemon desserts, orange glazes, citrus cakes, and tarts are some of the most loved treats for February birthdays.

🎂 The Cake I Made to Celebrate Them

To honor that, I made a lemon layer cake with a light lemon glaze and a few soft piped roses on top.

Nothing fussy. Nothing overdone.

Just a cake that feels:

  • Fresh
  • Comforting
  • Bright
  • Beautiful in a quiet way

The glaze drips softly down the sides, the zest on top makes the whole kitchen smell incredible, and it’s the kind of cake that doesn’t need heavy frosting to feel special.

🍋 Lemon Layer Cake with Light Lemon Glaze

Makes: 2 or 3 round layers (8–9 inch)

Ingredients

Lemon Cake

  • 2½ cups all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, room temperature
  • 1¾ cups granulated sugar
  • 4 large eggs, room temperature
  • 2 Tbsp fresh lemon zest
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk, room temperature

Light Lemon Glaze

  • 1 cup powdered sugar
  • 2–3 Tbsp fresh lemon juice
  • 1 tsp lemon zest (optional)

Instructions

Make the Cake

  1. Preheat oven to 350°F. Grease and line cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy (2–3 minutes).
  4. Add eggs one at a time, mixing well. Stir in lemon zest, juice, and vanilla.
  5. Alternate adding dry ingredients and buttermilk, starting and ending with dry.
  6. Divide batter evenly into pans.
  7. Bake 22–26 minutes, until a toothpick comes out clean.
  8. Cool completely before glazing or stacking.

Make the Glaze

  1. Whisk powdered sugar and lemon juice until smooth.
  2. Adjust consistency — it should be pourable but not runny.
  3. Drizzle over cooled cake layers or the assembled cake.

Serving Notes

  • This cake is perfect bare, lightly glazed, or with a thin layer of whipped frosting.

Keeps well refrigerated for 3–4 days.

This time of year, we’re still baking for comfort. But we’re also ready for a hint of spring.
