1. Icing That’s Too Runny or Too Thick
Royal icing consistency is everything. Too runny and it floods over the edge; too thick and it won’t smooth out. Test your icing with the “10-second rule”—drag a knife through your bowl and count how long it takes the line to disappear. Around 10 seconds is perfect for flooding.
2. Not Letting Cookies Cool Completely
If your cookies are even slightly warm, the icing will melt, slide, and never set right. Always cool your cookies fully before decorating (pro tip: bake the night before so they’re ready to go).
3. Skipping the Outline
That thin outline acts like a wall to hold in your flood icing. Skipping it can lead to messy edges and uneven shapes. Take the extra 20 seconds—it makes a huge difference.
4. Rushing Drying Time
We get it—you’re excited to see the finished product! But if you don’t let each layer dry properly, details will sink or smudge. Aim for overnight drying for base layers and a few hours for smaller details.
5. Overloading Details
Less is often more. Clean lines and simple accents look beautiful without needing to pile on extra colors and shapes. Focus on mastering basics before layering on too much.
